RollrightMade by David Jowett, from the organic milk of Manor Farm, Chedworth, 800 feet up in the Cotswolds. David uses the milk of a mixed herd of British Friesians and Dairy Shorthorns to produce his stunning cheese. Wrapped in spruce bands, this wash rinded cheese slowly ripens to glorious maturity. When younger, as pictured here, the paste is firmer with complex, woodsy notes. As it ages, the paste becomes unctuous and rich with pronounced notes of spruce
