Les Fouilles 2022Fermented as whole clusters for 10 days before being pressed off into 225L barrel to finish fermentation. Aged for 10 months elevage.
A blend of red and white grapes: Garnacha
the grapes must see a lot of sun so that they tire from oxidation and dehydration
Vinification is carbonic maceration with indigenous yeasts
These Grolleau vines come from massal selections from 1936
and it has a sweet yet crisp finish
followed by a year of rest in tank
7 months of skin contact and then left to ferment in terracotta amphoras buried in the vineyard
This cuvée comes from old vine Auxerrois & Pinot Blanc planted on limestone in Alsace

more than a quarter was brewed with Pajottenland grown cereals
are destemmed entirely and macerated on the skins for two weeks
