Yone Farm Melange "Rhodanien" 202381% Mourvdre, 19% Syrah Made from grapes grown in their vineyards using reduced amounts of pesticides (45% of the region's recommended pest control calendar). Fermented with wild yeasts, fermented in stainless steel tanks, aged in old barrels, unclarified and unfiltered. Small amounts of antioxidants are used. Rhodanien means Rhone style. This wine has aromas of cassis, fig, and blackberry, with a hint of animal flavor and a refreshing spiciness. It

Before bottling
The grapes were pressed using a horizontal mechanical press
with the Merlot grapes harvested and destemmed later added (about 3 weeks MC)
likely the result of anaerobic fermentation after pressing
and three and acid in Japanese sounds similar
